SUGARY CHEX AND NUTS1 cup butter ½ cup light brown sugar 4 cups corn Chex 4 cups wheat Chex 4 cups rice Chex ½ can mixed nuts ½ tsp salt. Heat oven to 250. Melt butter in a small saucepan over medium-low heat, add brown sugar and stir until it begins to melt and the mixture is smooth and completely blended. Place the cereal and nuts in a large roasting pan and gradually pour over the brown sugar-butter mixture, gently stirring and folding so all the cereal and nuts get coated. Sprinkle with salt and toss again. Place in the heated oven for 1 to 1 hour and 20 minutes. Toasting time depends on whether you’ve used roasted nuts or raw ones. The raw ones will take longer. Every 15 minutes, stir gently so everything gets heated evenly. Remove from the oven when toasted to your satisfaction. Don’t let the nuts get too brown because they will continue cooking for awhile out of the oven. Store in a metal tin. |
