ORANGE-ALMOND BISCOTTI2 tsp. Baking powder 2 Tbsp. grated orange peel 1 tsp. Salt 1 tsp. Vanilla extract ½ cup butter, softened 1 cup slivered almonds, ¾ cup sugar toasted 1. Mix flour, baking powder with salt; set aside. 2. Beat butter & sugar with mixer until creamy. Beat in eggs, orange peel and vanilla. Gradually blend in flour mixture. 3. Knead almonds into dough by hand on floured surface. Divide dough in half. 4. Shape each half into a 12x2” log on greased baking sheet. Bake at 350 for 20 to 25 minutes or until light golden brown. Cool 15 minutes, cut diagonally into 1” thick slices. Place cut-side up on baking sheet, back 10 minutes on each side until lightly toasted. Cool. |
