IRISH SODA BREAD

4 Cups flour                     2 lg. Eggs, lightly beaten

2 tsp. Baking powder         1 ¼ cups buttermilk

2 tsp. Baking soda             1 cup sour cream

½ tsp. Salt                        3 cups currants & enough

½ cup sugar                          orange juice to soak

2 tbsp. Caraway seeds            them in.

Soak currants  in a bowl with the orange juice (approx. ½ hr.)  Grease a 9” round baking pan.  In a large bowl, combine flour (reserving 1 tbsp), sugar, baking powder & soda, salt, caraway seeds & currants.  In a small bowl blend eggs, buttermilk & sour cream.  Stir liquid into dry ingredients just until flour is moistened.  Knead dough in the bowl 10 or 12 strokes.  Dough will be sticky.  Then place it in the prepared pan and pat down.  Make a 3” long slit in the top of the dough.  Dust with the reserved flour.  Bake in a preheated 350 degree oven for 55 to 65 min.
