ACORN SQUASH RUSTICA

2 small acorn squash         3 tsp. Butter

1 small onion, chopped      ¾ cup chopped celery

1-½ cups packaged dry stuffing for chicken, prepared

     according to package directions

4 oz. Cooked turkey, cut in small cubes

1 orange, peeled, halved & cut into small chunks

Carefully cut squash in half horizontally, not through the stem; removing seeds & stringy portion.  Using 1-tsp. butter, rub the cut surfaces of the squash.  Place cut-side down in shallow baking pan with ½ inch water.  Microwave until tender. In small skillet melt 2 tsp. Butter, sauté onion & celery until tender.  In  medium bowl combine sautéed vegetables, prepared stuffing, turkey & orange pieces.  Spoon into squash halves.  Cover loosely with foil.  Bake in preheated 375 oven for 30 minutes; remove foil, bake 15 minutes longer.  Let stand 5 minutes before serving.  Makes 2 servings.
